Mediterranean-style chicken bake
Serves 4
4 bone-in chicken breasts, skin removed
Salt and milled black pepper
2 red onions, cut into crescents
2-3 garlic cloves, sliced
1 cup chicken stock
1/2cup white wine or verjuice
3 Tbs fresh oregano, chopped
250g cherry tomatoes
10 calamata olives
Preheat oven to 200C.
Place chicken, onions and garlic in a roasting dish. Season well and pour over the stock, wine and oregano.
Toss to combine.
Roast for about 10 minutes.
Add the remaining ingredients and continue to roast for about 15 minutes or until the chicken is cooked through.
Serve with a side salad.
