We made this recipe, tried it and loved it, but decided it would be even better with a tiny tweak. Pre-bake the pastry first, then top with the banana and bake again.
1 roll PnP puff pastry 1 egg, beaten 3 – 4 bananas, sliced lengthways Juice of 1 lemon Brown sugar
Preheat oven to 190C. Roll pastry into a neat rectangle. Create a border with the pastry off-cuts. Prick the pastry with a fork and brush the border with the egg wash, bake for 10 minutes. Arrange the sliced banana inside the pastry box. Drizzle with lemon juice and scatter with walnuts and brown sugar. Bake for another 10 minutes or until the pastry is crispy and the bananas are soft and caramelized. If you like, you can blow-torch the bananas to caramelize them further.
