Indian Spiced Salmon with avo, red onion and coriander sambal
4 salmon fillets Lime juice and olive oil Indian curry paste or curry spice
Sambal 1 large avocado, finely diced 1 small red onion, finely chopped 1 small red chilli, deseeded and finely chopped (optional) Small handful of fresh coriander, chopped Lime juice Olive oil Salt and black pepper
Preheat oven to 220C. Combine the curry paste with the lime juice and some olive oil. Brush onto the fish then roast for 8 – 10 minutes. Mix all the sambal ingredients in a bowl and season to taste. Serve the fish topped with the sambal.
